There is almost nothing more enjoyable than coming back from the Farmer’s Market early on a Saturday morning, walking into the kitchen, and making pancakes. There’s something about the fluffiness and texture that make them such a wonderful food. Because I know I’m not the only one out there who loves these delicious things, here is my all-time favorite pancake recipe. The best part? They are completely unrefined and healthy, and can be easily adapted to be vegan!
So, here is my love. The fantastic Oat Pancakes.
1/3 cup oat flour (this is simply ground oatmeal)
1 tbs Greek yogurt (omit for vegan recipe or replace with coconut cream)
1 egg (for vegan, substitute with flax egg)
1/4 tsp vanilla extract
1/2 tsp baking soda
1/2 tsp cinnamon
Almond milk to desired consistency
