The Perfect Pancake

IMG_0186There is almost nothing more enjoyable than coming back from the Farmer’s Market early on a Saturday morning, walking into the kitchen, and making pancakes. There’s something about the fluffiness and texture that make them such a wonderful food. Because I know I’m not the only one out there who loves these delicious things, here is my all-time favorite pancake recipe. The best part? They are completely unrefined and healthy, and can be easily adapted to be vegan!

So, here is my love. The fantastic Oat Pancakes.

Recipe:

Serves 1

1/3 cup oat flour (this is simply ground oatmeal)

1 tbs Greek yogurt (omit for vegan recipe or replace with coconut cream)

1 egg (for vegan, substitute with flax egg)

1/4 tsp vanilla extract

1/2 tsp baking soda

1/2 tsp cinnamon

Almond milk to desired consistency
